Hi! How is every one’s Tuesday going? Mine has been pretty good due to the perfect weather, not a cloud in the sky.. a bit on the hot side though, 78 deg, for October. I was out running errands this morning and I came across something very spooky. I was sitting in line at a stop light and I about freaked out when I thought I saw a foot hanging out of the trunk. I thought to myself, surely not… but oh yes, it was a foot. A faux foot but a foot nonetheless. Looks like some one is into the Halloween spirit, bahaha..
Anyway, lunch was awesome. Due to this.
Spinach Pesto. We had about 2 tbsp left of pesto sauce, so I dumped it in the blender with some spinach and almond milk to thin it out, of course.. I had to add more garlic. It turned out great, and lightened up an otherwise caloric spread.
Enter spinach sun-dried tomato wrap. I spread a Flat Out with some spinach pesto and sun-dried tomato hummus.
I added some sauteed mushrooms and a sprinkle of shredded cheese on top.
Wrap it up, grill it and enjoy while pesto/mushroom/sun-dried tomato mess is oozing out of your wrap and onto your outfit.
Luckily, I ran to the sink and got it out real fast. Hey, it was one of my favorite outfits.
What holiday do you get into the most? I can’t say that I am really festive during any holiday but I have been really into the fall season this year since I missed it for the past 2 years. But, my favorite holiday is Thanksgiving. Christmas is always memorable, yeah.. but there is so much stress during that time. I just want to sit back, relax and enjoy the company and not stress out about everything being perfect.

oh my god that wrap looks so good. I hate how pesto is so high in calories because its so tasty on sammies! I get WAY into christmas. I love buying gifts, christmas movies, decorating and visiting family!

Ahh my favorite holiday has got to be Chinese new year!! For a month, we eat feasts of 10 dishes or more with our family members, and all the married people give single people “Red envelopes” that contain money! No better way to make some money than through Chinese New Year! Hahah

I’m not very into holidays either, but 4th of July is one of my faves.
