What the fall brings

Hi!

Sorry to have been MIA yesterday. I just didn’t feel like blogging. Hope you can understand 🙂 After my mini break, I am back in full blogging mode. It is just nice to turn off the computer for a day and focus on other things.

I went to the gym yesterday for a strength training session. I never strength train- mostly because I don’t know how. But nothing a little research couldn’t fix. My session was okay but not nearly as yummy as my yoga session afterward.

This morning, I went for another 3 mile glorious run! Ah, I can’t believe how much I have fallen in love with running. I can physically feel a difference from only 2 weeks ago. I asked for some post running stretches a few days ago and most of you said that I should be okay with all the yoga that I do. After a little research, I found some specific poses that help with running- triangle, pigeon and happy baby. So, after a run.. I have been doing a few lunges and leg stretches and ending with these lovely poses. Hopefully that will keep my body from getting injured.

Onto the eats, honestly.. nothing too interesting.

Okra fries with ketchup (I got a buttload of okra at the farmer’s market last weekend)

A healthy hot dog with chicken sausage, a whole wheat hot dog bun and ketchup. I really don’t like baseball or American football for that matter but I love hot dogs 😉

Of course, my morning couldn’t be complete without oats. I have been really enjoying it plain lately. And, I finally found a way to make oat bran not so damn filling. I add half oatmeal and half oat bran. Perfect.

I was feeling lazy last night and got a salad from Chipotle with romaine, black beans, corn and guacamole. Holy crap, they loaded the guacamole, I told the server for a little and he plopped on a huge pile of the stuff, oh well.. I took about half of it off before the photo. I like to add anything that I get take away to a regular plate. It makes the eating experience much more enjoyable.

Anyway, I have quite a few exciting things going on in my life right now along with one not so exciting thing.

Things that I am looking forward to:

  • My swedish family coming to visit us in Charlotte
  • Meeting our baby niece for the first time (Hans’ brother and his wife welcomed a baby girl in June)
  • Spending a weekend in the mountains in a cabin
  • Going to NYC!!!!!
  • Seeing my family and friends in Oklahoma
  • Working as a substitute teacher in Tulsa
  • Going to Sweden for Christmas

Definitely some fun things coming up for me in these next few months!!! But, here is the downer. Hans is leaving in the middle of October for 3 months of job training in Europe. It’s official now. So, I am going home to Tulsa to work. (I am too much of a scaredy cat to stay in Charlotte alone with no job or school, can you say boring??) The only good part about this whole ordeal is that I get to go to Sweden to meet Hans for Christmas. Yay!

    I’m looking forward to more trips to VA and a my friend coming to visit me here in November. Plus figuring out where I’m going to move in December!

    All your things sound super exciting, and you’re workouts have been awesome lately! 🙂

  2. mixing oat bran and rolled oats is the best, i love the texture it delivers. your okra looks awesome, i have never tried okra but it is so appealing to the eye! i am looking forward to halloween and SNOW!

  3. Well you are just full of plans and travel! I’m so sorry you and Hans have to be apart so long, but at least you can go home and then go see him at Christmas! That will be loads of fun. 🙂

  4. Oh I am jealous of your trip to NYC. I’m moving to Hoboken, a ten minute train ride away, in May and I will only get to go there once (in March) between now and then. Make sure you post about your favorite places there!
