A peek inside

Some of you were asking questions about my current situation, so I thought I would talk a little more about it. If you don’t care or if you simply don’t wanna hear about it just skip over this part 🙂 And maybe I am putting too much about my personal life out there for the world to see but ya know what? it makes me feel so much better to write about it so that is what I am going to do.

My husband is job training in Europe for 3 months this fall. I can visit him there for about 2 weeks and he is coming back to Charlotte for 1 week but that’s all. (he will be working long hours, sometimes nights, etc) So, I will go back to my hometown because I have a job there as a substitute teacher UNLESS I find a job here in Charlotte first that pays better than teaching.

Regarding school, I moved to Charlotte in late spring of 09. I have to live in North Carolina for 1 full year in order to get in state tuition. (Out of state tuition=$$$) That means I can’t start until fall of 2010. Ideally, the schools would be really nice and let me start in January without the jacked up out of state tuition price but we will have to see. And… I am studying to be an English and French teacher. Eventually, I want to become a professor but until then high school. I just love the university atmosphere. The students are anxious to learn instead of you having to push them to get through school.

And if that wasn’t enough of a peek inside of my personal life, here is more! Photos of our new apartment!! The kitchen, dining room and living room are almost finished but the bathroom and bedroom still need a lot of work.

The kitchen. One of the reasons we chose this apartment. The dish washer, fridge and counter tops are brand new and I like how open the kitchen is.

We definitely have a clean, simple, Scandanavian style. (Hello! my hubby is Swedish and there is an Ikea on the other side of town, lol)

Onto the food! I was planning to have leftovers (scroll down for recipe) for dinner last night BUT after I heated it up, it was just too soggy for my liking. So, I picked out all of the veggies and threw out the soggy bread. I know, I know.. kind of wasteful but at least I didn’t throw the whole thing out.

I made a killer sammie with leftover veggies, hummus and spinach on Dakota bread. I had the veggies that wouldn’t fit on the sandwich on the side. Much better than soggy bread pudding.


I have a fun weekend planned! It’s almost here!!

  1. I think we get to know you better and feel more connected you when you share more about yourself – I’m all for it. I think it’s possible to share just enough info but not too much either.

    I totally agree about university students vs. high school students. I worked for two universities before leaving my job to stay home with my kiddos and I love the atmosphere! Everyone that is there because they WANT to be! You are exactly right.

    Your apartment looks great! Your kitchen makes me want to get in there cook something! 😉

  3. Every time I’m about to post more info about myself I always second-guess if I should share that for essentially the world to see, but I have yet to regret it. 🙂

    And my hubby is an English teacher. I can see why you prefer the university environment over the high school one – haha my hubs has plenty of funny stories, but also some discouraging ones of kids just being too lazy to do the work.

    P.S. I love mountain biking! I can’t wait for us to get our own mountain bikes. 🙂

  7. I love when people share more about themselves. I think on my blog I undershare, and I’m working on that – I’m trying to find a balance between sharing enough without oversharing or undersharing, and I think that you do a good job of it 🙂

    I wish you the best of luck with your current school/job situation. In the end, it WILL all work out, it just may take longer than is preferred. But maybe just focus on this “free” time you have away from studying right now to learn about yourself, enjoy each day to the fullest, and prepare for what’s to come. Just think how amazing you will feel when you get to go back to school!! I would love a year off to rest 🙂

    Soggy bread is something I just CANNOT stomach. I don’t understand the whole biscuits and gravy thing. Soggy biscuit? Gross!
