Happy Weekend Loves!! I am so happy that the weekend has rolled around again, aren’t you? It is gloomy and dreary here in Charlotte but it seems like the sun is finally coming out behind the clouds to say hello! That may mean a hike for this lady soon. This week I have been busy with a new yoga studio and a job search. Unfortunately, no luck on the job front as of yet though! This weekend also means ANOTHER Ikea shop for this family. Hey! We are part Swede so Ikea is a must every weekend, obviously. But, I am happy to report that we finally got lucky and found a kitchen table! No more eating on the floor, I despise eating on the floor.. it really takes away from the whole “meal experience” per se. I have tried a few interesting food combinations this week, like this one.

I have also been experimenting in the kitchen. This week I made stuffed portobello mushrooms and salmon burgers.
For the portobello mushrooms, I mixed ricotta cheese, garlic, spinach, and sun dried tomatoes. I spooned the mixture into the mushrooms and then topped with marinara. They were delicious but they were definitely lacking something, a little crunch maybe? They were a bit mushy. So the following day for the leftovers I added Italian bread crumbs on the top and that was the perfect touch that it needed.

Culinary Creation number 2 was salmon burgers. These were quite easy to make and they were very yummy! I took two cans of salmon and mixed them with 2 eggs, 1/2 an onion-chopped, lemon juice, Italian bread crumbs, loads of garlic and basil and cooked on the skillet. Eaten two different ways:
and in a salad with BBQ sauce (diluted with water to be more of a dressing.)
Hans and I are going to see a movie tonight, you can bet that I will be enjoying some Swedish Fish and chocolate, mmm…
